Our Story
Dillon Bread Company began with a simple conviction: that bread deserves time. Not the rushed kind, but the kind that lets wild yeast do its slow, quiet work — developing flavor, building crust, creating something that can't be manufactured in a hurry.
Today, we bake at our Ryder Street bakery in Vallejo, where every loaf, croissant, and sourdough starter is tended by hand. We partner with local mills and dairy farms because the best bread starts with the best ingredients — and the people who grow them.

Sourdough, ciabatta, focaccia, and seasonal loaves — all leavened naturally, baked in small batches, and cooled on wooden racks before they ever reach your hands.
Butter croissants, pain au chocolat, danishes, and seasonal tarts — laminated and folded by hand each morning, then baked until every layer shatters.
Specialty coffee from regional roasters, poured with care. Espresso, pour-over, matcha, and house-made syrups — paired with our fresh-baked goods.
Our Craft
We don't rush fermentation. Our sourdough cultures are fed and tended daily — some for decades. Each loaf goes through a long, cold retard that deepens flavor and creates our signature open crumb.
We source organic flour from California mills, European-style butter from local dairies, and eggs from free-range farms in the Delta. Good bread is made in the field before it's made in the oven.
